OH DEAR! IT'S ALL GONE!!!


Swedish No-Crust Applie Pie - recipe info below
It's hard to belive this is the very last piece of the yummy Swedish Crustless Apple Pie. So quick and easy to make from fresh green apples and so tasty! I used the recipe link from Jo's Country Junction. Thank you, Jo! Next time - and there will be a next time! - I think I'll add some cranberries just for fun.

Oh, btw, I made a few changes to Jo's recipe: cut the butter from 10 tablespoons down to 8; used less sugar [my sugar was a mix of sugar + Splenda], walnuts instead of pecans.

I hope everyone in the USA had a lovely Thanksgiving Day yesterday. My day was filled with gratitude for Family, Friends, Health, and oh yes... some great food.  A special Thank You and blessings to all of YOU - my blogging friends and community - as we are all in this life together.

UPDATE: 5 Min Choco Mug Cake

A friend wanted to try Splenda in place of regular sugar in yesterday's recipe of 5 Min Choc Cake in a Mug. Hmmm, I didn't know if it would work so I tried it. Yummy!
Dumping the MugCake into a bowl helps it cool down quickly - some ice cold whipped creame helps, as well.
I did make a few modifications to the recipe just for fun: reduced oil from 3 Tblsp to 2 AND Added 1 tsp of Peanut Butter & about 1 tsp of Natural Agave Syrup [in with the liquids].  I used 4 Tblsp of Spenda instead of regular sugar. I stirred all this together with a fork in a big mug and cooked it in the microwave for 3 minutes -- 2 1/2 minutes might have been enough b/c my micro is very high wattage.  This quick cake was delish and I even added a squirt of Whipped Creame on top... made for a better picture, don't cha think? lol. OK, OK, I confess, I didn't have any ice cream.

5 Minute Chocolate Cake . . . for one! ;-)


Wow, I was just telling someone about this recipe post, but when I went to look for it, I found it still in the DRAFT folder! Yipes. So, without further ado - and several years later... here it is:

5 MINUTE CHOCOLATE MUG CAKE

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract

1 large coffee mug (MicroSafe)

METHOD: Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly. Pour in the milk and oil and mix well.. Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.EAT ! (this can serve 2 if you want to feel slightly more virtuous).

And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

ARTICHOKES, TORTELLINI & SPINACH... Yummo

This is a super quick post to share a salad I recently whipped up.  It is Vegan, quick, easy and tasty.  But before I do that I want to thank the many of you who have written me privately to wish me well as I begin this new doctor-ordered eating regime. I really appreciate your tips and loving support. Next post will be quilting! *g*

Vegetable Tortellini - cook al dente
Baby Cuke - diced
Edit: Baby cuke = Persian Cukecumber, but any will do. Sorry for confusion. Thanks, Elly.
Green Onion - sliced
Bell Peppers Red/Green/Yellow - chopped
Artichoke Hearts - quartered
     MIX drained Tortellini and prepared veggies together.
    ADD herbs/seasonings of your choice - I used Trader Joe's 21 Seasoning Salut -
    ADD a small amount of Lemon Juice and Oil Free-Sugar Free Italian Dressing.
   TO SERVE: Put a handful or two of Fresh Baby Spinach leaves on plate. Spoon Artichoke-Tortellini mix over Spinach. Top with diced Roma Tomato... Yummy!
